VINIFICATION:
The grapes were picked within 10 days, crushed and pressed straight away with no maceration. The fermentation was held in stainless steel tanks with temperature control and lasted for 20 days. After racking the wine remains on thin lees for one month and after that - in December - the second fermentation takes palce in closed tanks (Martinotti method).

The vineyard: the Freisa (70% of the blend) comes from an old vineyard situated in the typical zone for this variety in mid Piedmont - Chieri. The other red grapes come from our vineyards in the Langhe. The Favorita comes from the Cossano Belbo vineyard, where we source grapes for two other still wines.

The varieties: indigenous red grape varieties, some of them among the most diffused in Italy, others - rare and of quite limited production, such as the Pelaverga. The only one white variety - the Favorita, actually did us a “great favour” softening the bitter note of the Freisa that permitted us for the first time not to perform sugar corrections before bottling and actually bottle the wine “as is”, i.e. «brut nature».

The wine: delicate on the nose with red fruits, peaches and apple notes. The vague tannins tighten the structure and underline the dark mineral finsh.

The name: The hedgehog (“riccio” [rEE-choh]) is our symbol. Riccio + spumante = Ricciante.
