VINIFICATION:
The Freisa was crushed and pressed straight away. The vinification took place in a temperature controlled stainless steel tank and lasted about 20 days.<br>The Barbera & the Nebbiolo come from a saignée of our lots of Barbera d’Alba & Barolo.<br>The blend has been made right after the end of the fermentation and the base wine has been kept on thin lees for 6 months. The second fermentation took place in May (Charmat method).

The vineyard: The Freisa comes from an old vineyard situated in the typical zone for this variety in mid Piedmont - Chieri. The Barbera & the Nebbiolo come from our own vineyards in the Langhe area.

The variety: The Freisa is an ancient grape variety with unclear origin that is now mostly found in the Monferrato and Chieri zones in Piedmont, in the Langhe area it's nearly extinct. The traditional wine from Freisa is red, light and with some residual CO2 to make it "vivace", very few producers do a rosé sparkling wine from it.

The wine: We took the risk and the result gave us satisfaction. The Barbera makes it lighter, fresher and gives it a citrus touch, This is a festive wine, light and with a beautiful color, floral and wild berry aromas.

The name: The hedgehog (“riccio” [rEE-choh]) is our symbol. Riccio + spumante = Ricciante.
