Cold soak after crushing for 3 days. Traditional vinification in stainless steel tank with temperature control for 6 days. Maceration after the end of the fermentation for 10 days.

The vineyard: Own vineyards, a one block piece of 1,6 ha le Chiese single vineyard (classified regional cru of Monforte d’Alba since 2017), situated on a hill facing West. Due to the «cold» clay soils of Le Chiese of all Nebbiolos we have this is the last one to start vegetation and be harvested despite the vineyard location in the Southern part of the Langhe area.

The variety: The Nebbiolo is the king of the Langhe, the one with a world wide fame for producing wines to last and provide multiple pleasures with age. It’s our love and our passion, the variety that permits to «read and translate» the different terroirs of the Langhe better than the rest.

The wine: The Nebbiolo on clay soils tends to give more thick and powerfull wines with expressive fruit character. This one shows a well defined strawberry note on the nose. A love marriage with meat, a marvel with aged cheese and a spectacular harmony with truffle based cuisine.

The name: The hedgehog («riccio» in Italian) is our symbol and the name of the grape comes from ‘fog’ («nebbia»). «Hedgehog in the Fog» («Riccio in Nebbia») is a popular animated film from the mid 1970s.
